Chef Cooking Tips

Pheasants can be used in many recipes that you would normally make with turkey, chicken and even pork. Pheasants contain little fat so you need to keep adding fat to the bird when cooking eg bacon over the breast when roasting.

It is important to leave the pheasant to rest after it has been cooked to allow the juices to settle in the meat, this will ensure the meat remains juicy and tender. It is a good idea to remove the wishbone after cooking to allow for easier carving.
