Diced wild venison is made for slow cooking. Trimmed and diced by our butchers at Elston Farm, it turns meltingly tender in a casserole, stew, pie or curry, and the rich flavour stands up well to red wine, juniper, root vegetables and warming spices.
- High in protein – 23g per 100g (raw)
- Naturally low in fat – 2.4g per 100g, 1.0g saturates
- High in vitamin B12, and a source of iron and zinc
- About 115g of protein in every 500g pack
- Wild venison from Forestry England woodland, South West England
How to cook it
Pat the meat dry, toss in seasoned flour and brown in batches in a little oil. Add onions, stock or wine and cook gently, covered, at around 160°C (or on a low hob) for 2–2½ hours until tender. It also works well in a slow cooker.
Where it comes from
Wild deer from Forestry England woodland across the South West, taken with non-lead ammunition, then butchered, vacuum packed and frozen by our own team at Elston Farm, Copplestone, Devon. More about our wild venison.
