A boneless haunch of wild venison makes a striking roast with very little waste. It is lean, easy to carve and full of flavour, and it feeds a crowd for Sunday lunch or a special occasion. At around 1.2kg it serves 6–8. Prepared by our butchers at Elston Farm.
- High in protein – 23g per 100g (raw)
- Naturally low in fat – 2.4g per 100g, 1.0g saturates
- High in vitamin B12, and a source of iron and zinc
- Wild venison from Forestry England woodland, South West England
How to cook it
Defrost fully in the fridge. Rub with oil and season, sear all over in a hot pan, then roast at around 200°C until pink in the middle – about 35–45 minutes for a 1.2kg joint, or until the centre reaches 55–60°C on a meat thermometer. Rest for 15 minutes before carving. For a well-done result, pot-roast it slowly with liquid instead.
Where it comes from
Wild deer from Forestry England woodland across the South West, taken with non-lead ammunition, then butchered, vacuum packed and frozen by our own team at Elston Farm, Copplestone, Devon. More about our wild venison.
