Bacon and Cheese Scones


Why not try the quintessential English scone with a little difference, great for a snack or the perfect side to any picnic!

Ingredients: 100g butter, 8 rashers streaky bacon, 275g self-raising flour, ½ tsp baking powder, 150ml milk, 50ml vegetable oil, 1 egg, handful snipped chives, 150g grated cheddar.

Method: Fry or grill your bacon until golden and crispy, set aside to cool, and chop into small chunks. Mix your dried ingredients into a bowl, using your fingers mix in the butter until it resembles bread crumbs. Whisk the milk, egg, and oil before combining with the dried ingredients, mix together before adding cheese, chives, and bacon. Spoon into a greased muffin tin, bake for 20 mins at 200c/180c (fan).
