BBQ Chicken Burger with Wedges and Salad
Ingredients:
For the BBQ Chicken Burger:
- 2 pre-glazed BBQ chicken breasts from The Meat Box Company
- 2 burger buns
- 2 slices of cheddar cheese
- Lettuce
- Tomato slices
- Red onion slices
- Mayonnaise
For the Wedges:
- 2 large potatoes
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 teaspoon of paprika
For the Salad:
- Mixed salad greens
- Cherry tomatoes
- Cucumber slices
- Your choice of salad dressing
Instructions:
- Preheat your grill or oven to 375°F (190°C).
- Place the pre-glazed BBQ chicken breasts on the grill or in the oven. Cook for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C). Make sure to turn the chicken breasts halfway through the cooking time for even cooking.
- While the chicken is cooking, prepare the burger buns. Spread a layer of mayonnaise on each bun, then add lettuce, tomato, and onion.
- Once the chicken is cooked, place it on the prepared buns and top with a slice of cheddar cheese. The heat from the chicken should melt the cheese slightly.
For the Wedges:
- Preheat your oven to 400°F (200°C).
- Cut the potatoes into wedge shapes and toss them in a bowl with the olive oil, salt, pepper, and paprika.
- Spread the wedges out on a baking sheet and bake for about 25-30 minutes, or until they’re golden and crispy.
For the Salad:
- In a large bowl, combine the salad greens, cherry tomatoes, and cucumber slices.
- Toss the salad with your choice of dressing just before serving.
