Cajun Style Turkey Escalopes with Chilli, Mango Salsa


Healthy, flavoursome and extremely easy to make. Our latest recipe in the Healthy and Hearty range uses turkey escalopes, which are naturally lower in fat and calories then a chicken breast but still packed with taste.

2 x 200g turkey escalopes – rubbed with the cajun spices
1 tbsp olive oil for cooking

Heat up a frying pan with the olive oil over a high heat, add the turkey escalopes and lightly brown on each side for 1 minute then turn the heat down to medium/low and continue to cook for a further minute each side.
Turn off the pan and leave the turkey escalope to rest for 2 minutes in the pan.

Cajun spices

2 pinches of salt
2 pinches of black pepper
1 tsp garlic powder
1 tsp paprika
½ tsp cayenne pepper
1 tsp oregano
½ tsp dried thyme
1 tsp red pepper chilli flakes

Mix all the ingredients together and rub into the turkey escalope’s, refrigerate until ready to cook.
Mango, chilli salsa

1 ripe mango, diced
1 small red pepper, diced
1 small red onion, finely diced
1 chilli pepper, finely diced
Juice of ½ lime
5g fresh ginger, finely diced or grated (optional)
Small bunch fresh coriander, chopped

Mix all the ingredients together, place in the refrigerator until ready to serve.

Assemble the Dish – serving suggestion
Place some slices of avocado on a plate, put the turkey escalope on top and spoon on the mango, chilli salsa, garnish with some salad leaves and a drizzle of olive oil.
